So I decided to do a coffee chat this morning, here it is…
I love making good hashes. They really are very versatile in that you can use anything that you have on hand at the moment. They always turn out awesome.
This one has sweet potato, onion, broccoli, the broccoli stems and green pepper with just a little bit of salt and pepper and canola oil to cook in the cast iron. Cook the onion and sweet potato together with little salt and pepper and canola oil until the sweet potatoes are somewhat tender, then add the peeled and diced broccoli stems, broccoli florets and a rough chop green pepper. Season with a little more salt and pepper and continue to cook covered for 1 minute then turn off the stove and leave it sit covered an additional 2 to 3 minutes so the broccoli and green pepper continues to steam just a little bit. That’s it it’s just that easy, enjoy!
In past variations I have put in mushrooms, asparagus, jalapeno peppers, fresh spinach, kale and mesclun greens. If you’re using greens just sweat them in a little gently at the end just put them in with a lid on turn it off wait about 1 minute to 2 minutes and then toss it together and serve.
Happy Sunday to you! Here is one of my favorite brunches which is actually very good for you. One of my favorite things to do is to add fresh spinach or kale to the sweet potato hash in order to amp up the nutrition further.
Charles Mill Lake Park in Mifflin Ohio. A great place to enjoy the day use RV life boondocking area. Also a good spot to use a dump station if you need one of those for your RV.
Swimming fishing and boat rentals are available here. Camping is available in to Campground and starts about $35 a night for sites without hookups. Obviously not a good boondocking place for camping but is a great place for day use.
On this Independence Day please remember all of the United States military veterans who have made this day possible. Also know that your government turns their back on them regularly which is obviously repulsive. All of us Americans have the power to fix this by voting the correct people into Congress. Do the right thing! We can all fix it for the better for all veterans!
This is a 28th Annual Balloon Fest in Ashland Ohio. This is a free event and plenty of free curbside parking is available for vandwellers. However overnight parking is not allowed but there are plenty of Walmarts nearby.
